Francesco Mazzei Creates A Week-Long Menu Experience For Truffle Lovers
MasterChef Francesco Mazzei is teaming up with one of the world’s leading truffle suppliers for a once-in-a-lifetime experience at Villa Corinthia at the end of November.
Mazzei, who is hosting a kitchen residency at Villa Corinthia, will offer diners an exclusive chance to savour exceptional black and white truffles from premium Italian truffle specialists San Pietro a Pettine.
A seasonal truffle menu has been put together by Mazzei’s culinary team to showcase the exquisite tubers being flown down to Malta for the menu which will only be available for one week from 27th November until 3rd December.

The menu, which is available à la carte, includes the option of a beef carpaccio with generous shavings of white truffle, aged Grana Padano Riserva, local rocket, and a black truffle dressing.
A selection of primo courses including a delicate white truffle risotto and a housemade tagliolini heaped in true and with a balsamic cured egg yolk.
Other highlights include a succulent veal chop, pan fried in butter and sage and topped in white truffles.
For dessert, Mazzei has created a decadent zabaione dessert with Marsala wine, served with homemade almond biscuits and a final flurry of truffle shavings to close off the night.

Sourcing Umbria’s finest truffles
For the upcoming truffle feast, Mazzei announced he is partnering with supplier Carlo Caporicci, the owner of renowned truffle estate San Pietro a Pettine.
Founded in 1948, the family-run San Pietro a Pettine is considered one of the world’s leading suppliers of Italian seasonal truffles.
Located between Assisi and Spoleto in the Umbrian countryside, San Pietro a Pettine is a working truffle farm set on over seven hundred acres of protected woodland.
From the precious white truffles hidden along the Maroggia River to the sweet scented black truffles foraged in the highlands of Manciano, Ponze and Pigge – the delights being brought down to Malta for this menu event are not to be missed.

Mazzei, is recognised as a leading global ambassador of Italian cuisine.
He is the chef behind award-winning London restaurants like L’Anima, Fiume, and Sartoria and is a regular fixture on BBC shows such as MasterChef and Saturday Kitchen, Stanley Tucci’s Searching for Italy on CNN, and the Italian Hell’s Kitchen.
He has been hosting a kitchen residency at Villa Corinthia in Attard since June, during which Mazzei and his team of chefs have been introducing diners to exceptional Italian produce – from award winning ‘Nduja, to world-famous bergamot, and a carefully curated wine list showcasing Italy’s finest and lesser-known grape varietals.
Known for his philosophy of no-frills, honest cooking, Mazzei says that’s all you need when you’re working with ingredients as vibrant as he is.
“This is what we will be doing in Malta. Excellent food, but that is accessible and fun. We want people to come for the full experience or just a plate of pasta and a couple of glasses of wine. Mostly, we want people to have a good time, after all, that’s what it’s all about.”
