This Restaurant Is Actually Producing Locally Grown Prosciutto In What Might Be A First For Malta
The Pulled Meat Company have regularly impressed, what with their dedication to sourcing the finest local ingredients in a sustainable way. However, the chefs at the beloved restaurant may have just created a Maltese first – locally produced fresh prosciutto.
As the fruits of the company’s Farm to Fork project begin to be borne, this dry-cured prosciutto is made entirely from Maltese pork. It’s taken nine months for them to produce this first batch, but it is likely to be the first of many.
While they aren’t selling the whole legs yet, they do have homemade guanciale on offer
You can even try it in their infamously decadent pasta carbonara dish
