Watch: Traditional Japanese Chef Crafts Unique Sushi Experience With ‘Fantastic’ Maltese Fish

When it comes to raw Maltese fish, traditional Japanese sushi chef Taji is absolutely in love – just don’t serve it “Maltese-sushi” style to him, though.

“Oh, your fish is fantastic quality,” Chef Taji told Lovin Malta as he prepared a mini feast using mainly local fish.

“But what I’m seeing in Maltese sushi is adding a lot of flavours on top of each other…it’s a different type of sushi,” he said diplomatically.

Travelling the globe whipping up unforgettable sushi dinners for clients, Taji keeps returning to Malta regularly as he’s just such a big fan of the country – and what it’s got in its waters.

But when asked if he thinks Maltese sushi is “traditional” he just laughed.

Taji, who is currently based in the Netherlands, makes a living creating bespoke, unique sushi experiences for clients around the world.

Using a traditional approach to sushi, he believes the natural flavours need to come out and be the basis of a dish – and pointed at some common mistakes he’s seen over the years.

“Some chefs leave put the sushi in soy sauce for 10 seconds…you are basically eating soy sauce then,” he said.

And Taji explained his philosophy for good food and a good meal –

“30% is food, 30% is people, and 30% is ambience,” he stoically said.
