Prickly pears are one of Maltese people’s favourite fruity foods… but here’s one version of the bajtra tax-xewk that you’ve definitely never seen before French pâtissier Geoffrey Barault has been making waves online with his stunning culinary creations, his latest comes straight out of the fields around the island – and has a surprising, sweet addition
The french chef – who is currently based on the islands – made a stunning realistic pastry of the prickly pear, surprising his followers by seemingly picking the usually very thorny food straight out of a tree before cutting it up to reveal the sweet, mousse-filled interior
“I’ve created a delicious optical illusion pastry composed of a coulis and a mousse made from prickly pear, all coated with crunchy white chocolate” he wrote sharing videos and snaps of his creation
Besides showing this remarkable pastry, he also wrote some information about this fruit, explaining that it “grows on cactus and is an emblematic fruit of Malta, found all over the island.”
