Watch: Victor Borg’s Candid Take On ITS And Future Of Maltese Chefs
Renowned Michelin Star chef Victor Borg has warned that the current IT course for chefs is too long and many students lose heart midway through.
“Nowadays it takes five years to graduate as a chef, as long as it takes you to become a lawyer,” Borg said on a recent episode of Jon Mallia’s il-Podcast ta’ Jon.
Borg, who was recently a judge on the first season of MasterChef Malta, made harsh remarks that ITS (Institute of Tourism Studies) is currently not producing enough chefs.
“Many students give up and quit halfway through the course,” he said.

He said that the course used to only be two years long, after which students were given the opportunity to gain experience and study abroad.
Borg also questioned why ITS has never invited chefs from local Michelin Star restaurants to deliver inspirational speeches to up-and-coming chefs.
“No one in the past five years has ever invited one of these chefs to deliver a speech to these students, to inspire them perhaps. It is common practice overseas,” he said.
