7 minute brunch with garlic prawns, avocado and chilli

Ingredients
  • Avocado
  • Pre Cooked Prawns
  • Lemon
  • Maltese Bread
  • 1 Red Chilli
  • Garlic
  • Coriander
  • Chilli Cheese

We’ve all gotten into the habit of going out for brunch but there is absolutely no reason why we can’t make it just as tasty (and a lot cheaper) at home. Sometimes not having to face the world and just lounging about in your PJs is far more enjoyable than eating out. This dish takes 7 minutes from start to finish and is perfect for a weekend brunch session.

Instructions

Step 1

The key here is that there is very little cooking involved. Make sure to buy cooked prawns and a nice, thick loaf of bread.

Step 2

Peel the avocado, make sure you get a nice and ripe one.

Step 3

Cut the avocado in half and remove the stone.

Step 4

Chop it up roughly.

Step 5

Squeeze on the juice of half a lemon. This helps with the flavour but also makes sure it doesn't get all manky and brown.

Step 6

Season it up well with salt and pepper.

Step 7

Cut the chilli in half. If you're not a big fan of the heat, take out the seeds from the middle.

Step 8

Chop them up nice and small.

Step 9

Chop up the coriander as well. Doesn't have to be super precise; rough af will do just fine.

Step 10

With all the ingredients in there just run your knife through it on the chopping board.

Step 11

You don't want it to be too small. Just make sure the flavours are mixed through.

Step 12

Slice a couple of pieces of bread as thick as you can for your toaster.

Step 13

While they are toasting grab the garlic and the other half of the chilli.

Step 15

Throw them onto a small frying pan and heat up the garlic and chilli

Step 16

Add the prawns (all you are doing here is warming them up as they are already cooked). When they warm up chuck in the coriander.

Step 17

Big squeeze of the other half the lemon

Step 18

Whip everything off the heat and that's it you ready to assemble! So easy!

Step 19

Start with the bread and a good big smear of avocado. The more the better.

Step 20

Add the prawns on top

Step 21

Just tear a couple of pieces of the cheese up on top and it will melt in naturally from the heat of the prawn.

Step 22

Top with more avocado and the remaining prawns and there you have it. An incredible snack or brunch dish ready in no time.

Cooking doesn’t really get much easier than this. The quality of the bread really makes it, so find an amazingly fresh loaf. You can play around with it like taking out the chilli and adding something else like onions or tomatoes. So get out of bed and try it, you won't regret it!
