International Masterchef Francesco Mazzei Unveils Exquisite Calabrian Cuisine In Malta

The much-anticipated culinary residency of Masterchef Francesco Mazzei at Villa Corinthia has finally launched.

The decorated chef is serving up an unforgettable symphony of flavours with the his signature pasta, cocktails and a feast of delicious truffles at the helm.

During the launch event on Friday, London-based Mazzei expressed his intent to introduce his beloved Calabrian cuisine to Malta.

True to his word, the attendees were privy to an array of Mazzei’s acclaimed dishes.

Among these was his show-stopping house-made pasta, sumptuously sauced in a giant wheel of creamy Grana Padano cheese, and adorned with a serving of freshly shaved truffle.

In addition, guests relished a whole ‘Nduja, a spicy, spreadable pork sausage that Mazzei has tirelessly championed over decades. With a career spanning three decades, Mazzei has positioned himself as a premier ambassador of Southern Italian cuisine on a global scale.

During his six-month stint at Villa Corinthia in Attard, Mazzei plans to introduce Malta to the distinctive Calabrian delights like sweet Tropea onions, musky bergamot oranges, subtly smoky red peppers, and delicate liquorice root – all essential elements of the Calabrian scene.

Alexandra Pisani, the General Manager of Corinthia Palace, expressed her excitement about this unique collaboration with Mazzei.

Pisani praised Mazzei’s passion, enthusiasm, work ethic, humbleness, and most of all, his phenomenal pasta. She envisages Villa Corinthia as a place that all can enjoy, serving great humble food in a beautiful space.

Mazzei, born and raised in Calabria, has carved his niche in the culinary world with award-winning restaurants in London and beyond. Known for his philosophy of simple, honest cooking, Mazzei assures that this is the ethos he brings to Malta.

“Excellent food that is accessible. We want people to come for the full experience or just a plate of pasta and a couple of glasses of wine. Mostly, we want people to have a good time, after all, that’s what it’s all about.”
