Ring In The New Year With An Unforgettable Meal At Villa Corinthia

Masterchef Francesco Mazzei and Corinthia’s Executive Head Chef Stefan Hogan have joined forces to curate a New Year’s Eve dinner menu that promises to be a true culinary masterpiece to usher in 2024.

The exclusive 8-course dinner menu showcases some incredible dishes and offers diners the chance to savour premium products from leading international suppliers.

Chef Mazzei, who is hosting a kitchen residency at Villa Corinthia, said he and Corinthia Executive Head Chef Stefan Hogan together with their respective culinary teams have been working to create a truly special dining experience.

“We wanted to offer Malta something really special – a world class dining experience, a true culinary celebration to close off the year,” Mazzei said.

What’s on the menu?

Start the evening with a Villa Corinthia welcome cocktail of Divine Vodka, Baron de Rothschild Champagne, and Pomegranate Syrup, as you whet your appetite with festive canapés.

Then, the chefs prepared a selection of premier Italian antipasti – a flurry of dishes starting Mazara Shrimp Salad, Spicy Tuna Tartare and Sea Bass Crudo, a Crab Tartlet, Brown Crab Meat Mayonnaise and other delights.

Next, indulge in Butter Poached Lobster served with Truffle and Sea Asparagus, followed by Handmade Tortellini swimming in a soothing Capon Broth spiced with premium Marsala wine.

A melt-in-the-mouth Braised Veal Cheek is the showstopper of the evening, served with a sumptuous saffron mash and a bright gremolata.

In keeping with Mazzei’s Italian heritage, the meal is crowned with a traditional Italian Torta Di San Silvestro.

Often referred to as midnight cake, this decadent hazelnut and chocolate delight is served across the Italian peninsula on New Year’s Eve.

As the meal draws to a close, there will be other sweet treats and a final round of something savoury as the celebratory mood takes over and gypsy swing and manouche jazz band The Swing Nuages and a live DJ.

Who is Francesco Mazzei?

Mazzei, 50, is recognised as a leading global ambassador of Italian cuisine.

He is the chef behind award-winning London restaurants like L’Anima, Fiume, and Sartoria and is a regular fixture on BBC shows such as MasterChef and Saturday Kitchen, Stanley Tucci’s Searching for Italy on CNN, and the Italian Hell’s Kitchen.

He has been hosting a kitchen residency at Villa Corinthia in Attard since June, during which Mazzei and his team of chefs have been introducing diners to exceptional italian produce – from award winning ‘Nduja, to world-famous bergamot, and a carefully curated wine list showcasing Italy’s finest and lesser-known grape varietals.

Known for his philosophy of no-frills, honest cooking, Mazzei says that’s all you need when you’re working with ingredients as vibrant as he is.

“This is what we will be doing in Malta. Excellent food, but that is accessible and fun. We want people to come for the full experience or just a plate of pasta and a couple of glasses of wine. Mostly, we want people to have a good time, after all, that’s what it’s all about.”
