Newly Announced Maltese Donkey Burger Is Making People Feel All Kinds Of Ways

There are some outstanding burgers in Malta, but one new burger may be utilising a section of the farm that has yet to be explored – assuming it isn’t an early April Fool’s joke.
Fredy’s Diner in Qormi, the place behind chicken parmesan sloppy Joe’s and the Deep-Fried Bucket, has just announced its newest, and least domesticated, burger yet: the donkey burger.
Christian Stellini, the head chef at Fredy’s, swears this isn’t a joke.
“I invite anyone to come and taste the burger first before talking out of their “ass”,” he said to Lovin Malta.
Christian worked with a local farmer to source the donkey meat, and is rolling out the special burger tonight. It’ll cost €13.50, and comes on a bed of beetroot relish, some melted brie, and with a side of home-made dill chips.
“Donkey meat is surprisingly light, tender and tasty, though it is a very dark meat. We’ll be running the special until portions last – I think I have about 20 portions or so, if they fly off the grill I might be tempted to make it a recurring special,” he said.

In the off chance that you head down to Fredy’s only to find the Donkey burger doesn’t exist, make sure you get your hands on some of their in-house beef bacon.
That’s right – bacon made from beef belly.
“The beef bacon is very rich and flavourful, salty and aromatic. I cured it with my own blend of spices, sugar and salts. They were sat in a perforated dish so the excess water could drip off, and every day I transferred them onto a new one and flipped them over,” he said.
“Then I washed off the curing rub, and refrigerated them uncovered so that they could grow a pellicule around them so the smoke would stick better,” he said.
