What The Fish? This St Julian’s Restaurant Can Cook Fish 100 Different Ways

From calamari fritti to octopus to all the variations of fish in the sea, this seaside restaurant in St Julian’s is the place to be for all fish lovers in Malta.

Paranga is the InterContinental hotel’s seaside restaurant, located adjacent to the sparkly Mediterranean sea. The menu offers a crazy range of Sicilian flavours, and there’s something for everyone. Local fishermen deliver fresh fish and seafood daily, which can be paired with a specifically selected wine, aperitif or digestif.

Obviously, we can’t list all 100 dishes here. Because that would take forever to write – and forever to read. So instead, we’ve picked out some of our favourites, and the ones that sound the tastiest, to whet your appetite a bit.

Guazzetto di Pesce e Crostacei

The OG seafood dish – fresh clams, mussels, prawns, squid and filleted fish, served up in a light fish broth.

Linguine Artigianali di Gragnano IGT con Pesce Bianco, Purea di Melanzane e Basilico, Marmellata di Pomodorini

If you’re looking for something a little heartier to sate your appetite, why not go for this pasta dish? Gragnano flat thin pasta with white fresh fish in a delicate spicy white wine and wild fennel
sauce, aubergine and basil puree, and topped with cherry tomato & thyme marmalade.

Ombrina Arrosto, Caponata, Purè di Piselli

If you’re feeling particularly peckish, go for a pan-seared black meager fillet, with vegetable ratatouille, pea puree and rhubarb gel.

Polpo ai Ferri

Ever tried octopus? Look no further – this dish serves up barbecued octopus, alongside pea puree, potato and onion croquettes, ad sauteed green beans in garlic and tomato gel.

Risotto Acquerello ai Gamberi

What Mediterranean joint would be complete without a mouthwatering risotto? This one in particular is an acquerello risotto topped with prawns, squid, courgettes and prawn bisque.
