Mexican food has been in Malta for a few decades now, rising with the opening and closure of many a restaurant. Frida has come and gone, Amigos is still out there, and now it looks like the newly-opened Tex Mex South has got their chicken fajita game set to sizzle.

And that’s not a metaphor – the spiced chicken is brought out on a sizzling hot plate. In tow are bowls of guacamole, sour cream, salsa, pico de gallo, cheddar cheese and a pile of warm tortilla wraps.
